Aroma
Fresh clean fruit fills the glass, with the traditional citrus lift of lemons and limes is unmistakable. The warmer vintage has also added some riper fruit characters to really give the nose some complexity.

Palate
The palate is what you would expect from the best Hunter Semillons, beautifully clean and crisp. Hence it is full of citrus flavours and great mineral acidity, which doesn’t dominate the wine, but allows it to finish squeaky clean.

Cellaring
After seven years of wine making in the Hunter Valley I have not seen wines with a pH as low as the 06 Elliott Semillon. Low pH is wonderful for holding the SO2 levels which in turn keeps the wine in pristine condition. This wine can be cellared 7 to 10 years.
